This soft cake is full of goodness as well as being low in carbs to avoid after-lunch groginess.
It literally takes 90 seconds to mix all the ingredients and pour them into a baking tray (which can be whichever shape you like). It can also be a cake depending on how long you cook it for (the less the spongier).
Ingredients:
40 grams Coconut Flour
3 Eggs
1 Teaspoon Baking Powder
1 Tablespoon Ground Chia seeds (or other seed of choice)
120ml Coconut Milk (or other milk of choice)
Pinch of Sea Salt
Crushed Pine nuts (optional)
Pre-heat your oven at 170C (340F)
Whisk the eggs together in a mixing bowl and add milk of choice. Add this to a bowl of coconut flour, ground chia seeds, baking powder, and sea salt. Mix until all lumps are removed (easier said than done).
[You can add Almond flour or any other if desired - this may make the cake taste less like coconut.]
You can leave the mixture to rest if you like... I'm always skipping that part.
Pour into your oiled baking tray, add your nuts or seeds of choice on the top, and leave to rise for 15 minutes. :)
