Ingredients:
2 Cups Kale
2 Cups Gem Lettuce
1 Cup Sun-Dried Tomatoes
2 Large Eggs
7-10 King Prawns
Olive Oil
Milled Seeds of choice (Flax, Chia and Hemp for me)
Thyme
Coriander
Sea Salt
Pepper
Instructions:
Heat water to boil, add eggs and reduce heat - time depends on egg sizes.
Kale can be enjoyed raw - there are many health benefits in doing so, but if like me you like it soft you can steam it for 4 or 5 minutes.
Cut up the lettuce up in advance to avoid having to use a knife :)
Add Sun-Dried Tomatoes and cooked King Prawns. Add Olive Oil, Seeds, Thyme, Coriander, and other seasoning of choice.
I find the flavors are strong enough as they are, in fact I enjoy the bold flavors on top of the leaves without any additional ones to change them. But if you fancy Mayonnaise or Mustard that could definitely work too!
