Nutrient-Dense Salad Bowl

Ingredients
2 x Free-Range Eggs
1 Cup Spinach
1/4 Bell Pepper
1/4 Avocado
1/4 Beetroot
Handful of Baby Tomatoes
1 Tbsp Hummus
1 Tbsp Mustard with Cumin, Curry Powder, and Crumbled Cashews
1 Spring Onion
Instructions
Steam the Spinach and Bell Pepper.
Once veggies are removed (don't discard water yet), place them on kitchen roll to drain water.
Next, add vinegar to the water to lightly poach eggs (around 3 minutes, until egg white is firm).
Assemble these on a plate and add Beetroot, Avoado, Tomatoes, Hummus and Mustard, and sprinkle on the Spring Onion.
Season with Salt and Pepper.
