Prep: 15 minutes.
Ingredients:
6 Organic Dates / 2 Bananas
30g Coconut Flour
50ml Vegan Milk of choice
100g 100% Dark Chocolate
1 Tsp Coconut Oil
1 Tbsp Cinnamon Powder
Milled Flax seeds
Optional:
1/4 tsp Stevia Powder
Drizzle of Almond Extract (Waitrose) and/or Drizzle of Orange extract (also Waitrose)
2 Tbsp Peanut Butter
Instructions:
Step 1&2: Heat up your oven at 200 Celsius.
Melt the Dark Chocolate over a Bain-Marie (bowl over boiling water) until homogeneous. Add any desired sweeteners; Almond Extract was a great find for me - alternatively I've heard that Ground Almond works too. I usually add some Stevia powder here too (for a Keto friendly Brownie, you can remove the dates and simply add lots of this magic powder in stead.)
While the chocolate melts - filling the kitchen with a delightful aroma of cocoa, blend up the Organic dates in a Vegan milk of choice (Oat Milk in this case). I mention Organic just because they usually spray these quite heftily if not. You can add half a banana to this if you would like that flavor in your Brownie. Last, add the Coconut Flour: it's important to do this step last, as otherwise the Flour soaks up the Milk and prevents from breaking the dates down properly (learnt from experience...).
Step 3: Mix the two together until smooth.
Step 4: Spread mixture out on a baking tray - you can leave it at that, but I chose to roll mine around some Peanut Butter (just cos I love it).
Step 5: Stick it in the oven for around 10 minutes for a squidgy texture (it'll continue cooking for a bit when taken out). Alternatively, for a more solid texture leave in the oven for around 13 minutes.
Sprinkle some seeds on top if you fancy. Et voila!
