Ingredients (Makes 5 medium Cupcakes):
4 eggs yolks
100g 100% Dark Chocolate
40g Buckwheat Flour
20g Chocolate Powder
20g Protein Powder (optional)
15g Cinnamon Powder
100ml Oat Milk
2 Bananas / 5 Large Dates
Method
Pre-heat oven at 180 degrees Celcius.
Melt chocolate in a bain-marie, then mix with egg yolks.
Now, blend up the Buckwheat Flour, Protein Powder, Chocolate Powder, Cinnamon Powder, and Bananas/Dates with, give or take, 100ml of Oat Milk. The consistency should not be too liquid, if it is so, add more Buckwheat Flour and/or Chocolate Powder.
Add both mixtures together in a large mixing bowl and stir thoroughly to avoid any lumps.
Pour into greased oven tray - the shape that you desire.
Cook for approx 10 minutes.
